
Getting That Perfect Crust with Shortwave IR
If you’ve ever worked with a steam oven, you know the struggle. You’re basically fighting a war between moisture and heat. Steam is a lifesaver for the inside of the bread—it gives you that great volume and a soft crumb—but it’s a nightmare for the crust. It keeps the surface too cool. If you want that deep, golden-brown color, convection just won’t cut it. You need something that hits the dough hard and fast. That’s where infrared (IR) comes in.
Why “Instant” Heat Matters
We use shortwave halogen IR lamps because they don’t waste time heating up the air. They just beam energy straight into the surface of the bread. It’s almost immediate. You flip the switch, and in a few seconds, you’re at peak power. This means you can give the loaf a quick, intense blast of heat right at the end of the bake. You get that gorgeous color without drying out the middle or overcooking the whole thing. It’s a precision strike, not a slow burn.
The Nitty-Gritty on the Hardware
Inside these lamps, there’s a tungsten filament tucked into a high-purity quartz tube. We use quartz because it lets the radiation pass through without soaking up the heat itself. Depending on how much space you have in your oven, we can tweak the length and wattage. If you go with a high-voltage setup, you get more heat in a smaller space. It’s a great way to keep the footprint small while still packing a punch. And because nobody likes a headache during repairs, we use standard connectors like R7s or Sk15. They’re basically plug-and-play, so you aren’t staring at a dead oven for hours while you fumble with custom wiring.
The Catch
Now, there is a tradeoff. When you’re pumping out that much localized heat, things get hot—really hot. If your cooling fans aren’t up to the task or your heat shields are flimsy, you’re asking for trouble. You could end up warping the chassis or frying your wires. It’s all about balance. You want the intensity for the crust, but you have to make sure the rest of the oven can handle the sweat.
